Zucchini with Cottage Cheese
This Zucchini with Cottage Cheese is a quick and simple side dish made with zucchini, onion, garlic, dried mint, and oregano, and topped with cottage cheese. It takes just a few minutes to make this veggie dish.
Sautéed zucchini with cottage cheese is a perfect side dish for grilled chicken or fish or even as a vegetarian main dish.

Yield: Serves 3
- 2 medium zucchini, thinly sliced
- 1 medium onion, finely chopped
- 3 garlic cloves, finely chopped
- 1/2 teaspoon turmeric powder
- 1/2 tablespoon dried mint
- 1/4 teaspoon dried oregano
- 2-3 tablespoons vegetable oil
- cottage cheese
- salt and pepper to taste
Heat 3 tablespoons oil in a skillet over medium-high heat. Add the onion and sauté until golden.
Add the garlic and zucchini and cook until golden and tender, stirring occasionally. Add the mint, oregano, turmeric powder, salt and pepper to taste. Cook for 2-3 more minutes.
Transfer to a serving dish and top with cottage cheese. Serve this Zucchini and Cottage Cheese as a side dish or as a light lunch or dinner.
