Yield: 10 Bites
- 200 g unsalted sunflower seeds, about 1 1/2 cups
- 2 1/2 tablespoons maple syrup
- 1 teaspoon cardamom
- 80 g dark chocolate
- pinch of salt
Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper.
In a bowl, gently mix together the sunflower seeds, maple syrup, cardamom, and salt until well combined.
Scoop out portions of the mixture with a spoon and transfer them to the prepared baking sheet, shaping each into flat discs.
Bake for 10-15 minutes or until lightly golden around the edges. Allow to cool completely.
Once cooled, melt the dark chocolate in a microwave-safe bowl in 30-second intervals until fully melted.
Dip the bottom of each sunflower seed bite into the chocolate, then place them on parchment paper with the chocolate side facing down until set. Or drizzle some chocolate on top.
Store in an air tight container in the fridge.
