Spicy Shrimp Rice

Spicy Shrimp Rice is a flavorful one-pot dish made with shrimp, rice, garlic, green onion, tomato, and lots of spices. It is quick to prepare, making it an ideal choice for a satisfying weekday meal.
If you have some leftover cooked rice, this one-pot rice dish would be a great idea to make a fast meal. Just stir-fry all the ingredient, add the cooked rice, mix and serve. Perfect dish for spicy food lovers!

Yield: Serves 3
- 3 cups cooked rice
- 400 g shrimp, peeled and deveined
- 3 green onions, both green and white parts, sliced
- 1 cup chopped fresh parsley
- 3 garlic cloves, minced
- 1 large tomato, diced
- 4 tablespoons balsamic vinegar
- 1 tablespoon butter
- 3 tablespoons vegetable oil
- 1 1/2 teaspoons chili powder
- 1/2 teaspoon oregano
- 1 1/4 teaspoons paprika powder
- 1/4 teaspoon garlic powder
- 1/2 teaspoon thyme powder
- 1/4 teaspoon black pepper
- 1/8 teaspoon red pepper (add more or less depends on your taste)

First combine all the spices. Set the seasoning aside.
Heat butter and oil in a large skillet over medium-high heat. Add garlic and sauté until fragrant, about 1 minute. Add shrimp and seasoning, stir and cook for 1-2 minutes.
Then add tomatoes, green onions and balsamic, stir and continue to cook for 3 minutes.
Add rice and 1/4 cup water. Cook until everything is mixed and heated through, about 6-7 minutes. Stir in the parsley and serve.
