Spicy Mixed Vegetable

Spicy Mixed Vegetable is a perfect side dish for grilled meats and roasted chicken. It also pairs well with plain rice or flatbreads, adding a vibrant and spicy touch to the meal. Your guests will be coming back for seconds!
Yield: Serves 4
- 3 medium zucchini, sliced
- 1 cup sliced scallion
- 1 medium green pepper, chopped
- 350 g mushrooms, sliced
- 1 medium tomato, chopped
- 1 1/2 cups small cauliflower florets
- 6 garlic cloves, minced
- 3 tablespoons vegetable oil
- 6 tablespoons crushed tomatoes
- 2 tablespoons lemon juice
- 1/2 teaspoon ground cinnamon
- 1 teaspoon turmeric powder
- 3 tablespoons dried basil
- salt
- 1/2 teaspoon red pepper
Heat oil in a pot over medium heat. Add garlic and sauté for 1 minute. Add scallion, cauliflower florets and green peppers and sauté for 5 minutes.
Add turmeric, cinnamon, salt and pepper and cook for 10 more minutes.
Add the chopped tomatoes, crushed tomatoes, zucchini, mushrooms, lemon juice and basil. Pour 1/3 cup water and cook covered until vegetables are tender.
