Smashed Potatoes with Cheese

Smashed Potatoes with Cheese are one of the easiest and tastiest side dishes or appetizers you can make! They are a healthier alternative to French fries and can be served alongside chicken, fish, or steak.
The potatoes are boiled until just tender, gently smashed flat, then baked to a golden crisp. They are topped with cheese and garnished with fresh cilantro.

Yield: Serves 3
- 8 small potatoes
- 1/3 cup chopped fresh cilantro
- 1/2 cup shredded mozzarella cheese
- olive oil
- salt and black pepper to taste
Cook the potatoes in salted water until tender - a fork can easily be poked through them. Drain and allow to cool for 5 minutes.
Preheat oven to 400 degrees F.
Generously drizzle a baking sheet with olive oil. Place potatoes on the baking sheet. Crush each potato with the flat bottom of a glass until it is about 1/2-inch thick.

Using a pastry brush, brush each potato with olive oil and season with salt and pepper.
Bake in the oven until golden and crispy on top, about 20 minutes.

Once potatoes are crispy, divide mozzarella cheese on top of the potatoes and bake until cheese is melted, about 5 minutes. Garnish with cilantro and serve.
