Sautéed Olives
Tired of the same boring appetizer? Try these pan-fried olives with green onions, olive oil, tomato, and turmeric. This easy-to-make appetizer is perfect for preparing in advance.
Sautéed Olives can be served warm or cold with any kind of bread as a simple appetizer, as a side dish with roasted meat, or as a flavorful topping for various dishes like pasta and salads.
Yield: Serves 5
- 1 cup green olives, pitted (if olives are salty, soak in the cold water for 15-20 minutes and then drain)
- 1 cup black olives, pitted
- 4 medium tomatoes, diced
- 1 cup sliced green onions
- 4 tablespoons extra-virgin olive oil
- 2 tablespoons tomato paste
- 3/4 teaspoon turmeric powder
- salt and black pepper to taste
Heat olive oil in a frying pan over medium heat. Add green onions and sauté until soft, about 5 minutes. Add turmeric powder and stir. Add the olives and cook for 2 minutes.
Stir in the diced tomatoes and tomato paste, and cook for 10 minutes. Add salt and black pepper.
Serve warm or cold with any kind of bread or cracker.
