Salami Baked Eggs
Salami Baked Eggs dish is made of poached eggs on top of a bed of salami slices in a flavorful tomato sauce, topped with feta cheese. This comforting casserole is a popular breakfast or brunch option for those looking for something a bit different than traditional egg dishes.
Serve with crusty bread, toast, or a baguette, or with a simple salad like Avocado Spinach Salad on the side.
Yield: Serves 4
- 1 onion, thinly sliced
- 2 garlic cloves, minced
- 4 eggs
- 150 g German salami, thinly sliced and cut in half
- 2 tomatoes, diced
- 1/2 cup chopped green bell pepper
- 6 medium mushrooms, sliced
- 3 tablespoons olive oil
- 1 cup pasta sauce, any kind you like
- 1/4 cup crumbled feta cheese
- 1 teaspoon dried oregano
- black pepper
Preheat oven to 375 degrees F.
Heat the olive oil in a skillet over medium heat. Add the onions and sauté until slightly golden. Add the garlic and sauté until fragrant, about 1-2 minutes.
Add the tomatoes, mushrooms and bell peppers, and cook for 10 minutes or until soft. Add the pasta sauce and black pepper. Cook for about 5 more minutes or until the sauce is bubbling and slightly thickened.
Place the tomato mixture in an 8-inch round baking dish. Add the salami.
Make 4 wells, and break an egg into each well.
Top with feta cheese and oregano.
Bake in the oven for about 15-18 minutes or until the egg whites are set and the yolks are still soft. Serve with toasted bread.
