Roasted Red Pepper with Olives & Feta

Yield: Serves 4
- 1 (17.5oz) jar roasted red peppers, drained and chopped
- 3/4 cup olives, chopped
- 1/2 cup chopped walnuts
- 1/3 cup crumbled feta cheese
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried oregano
- balsamic glaze
- black pepper to taste
In a bowl, toss the roasted red peppers, olives and walnuts with olive oil, balsamic vinegar, oregano, and pepper. Top with the crumbled feta and drizzle with the balsamic glaze. Serve with crispy bread.
