Roasted Cauliflower with Yogurt

Today I am going to share another delicious and healthy vegetarian dish recipe made with cauliflower, yogurt, and lots of spices.
Roasted Cauliflower with Yogurt is a versatile dish loaded with flavor that can be served as a side, appetizer, or even a main course when paired with grains or proteins, like Grilled Chicken Red Pepper Skewers or Mustard Crusted Chicken.
Yield: Serves 4
- 1 large head cauliflower, cut into large florets
- 1 1/4 cups plain yogurt
- 3 tablespoons olive oil
- 2 garlic cloves, minced
- zest and juice of 1 lemon
- 1/2 teaspoon ground cardamom
- 3/4 teaspoon curry powder
- 3/4 teaspoon ground cumin
- 1/2 teaspoon paprika powder
- 1/4 teaspoon ground cinnamon
- salt and black pepper to taste
- 1/3 cup pine nuts
- 1/2 cup chopped fresh cilantro
- crumbled Feta cheese
Preheat oven to 375 degrees F.
In a bowl, mix together yogurt, olive oil, garlic, lemon juice and zest, cardamom, curry powder, cumin, paprika powder, salt and black pepper to taste.
Place the cauliflower florets in an 11x8-inch baking dish. Add the yogurt mixture and toss until fully coated.

Bake until tender and golden, about 50 minutes.
To serve, transfer to a serving dish, sprinkle with cilantro, Feta cheese, cinnamon and pine nuts. Enjoy!
