Potato Cake with Onions

This simple Potato Cake with Onions made with sliced potatoes, onions, herbs and Parmesan cheese makes a perfect side dish for any holiday meal!

Yield: Serves 4
- 4 large Yukon gold potatoes, peeled and very thinly sliced
- 1 small onion, thinly sliced
- 3 tablespoons melted butter
- 1/2 teaspoon garlic powder
- 3 teaspoons dried oregano
- 1 teaspoon dried mint
- 2 tablespoons grated Parmesan cheese
- salt and black pepper to taste
- chopped fresh parsley for garnish
Preheat oven to 375 degrees F. Line a 9 inch springform pan with parchment paper.
Place the potatoes into a mixing bowl. Add the onions, melted butter, dried herbs, garlic powder, Parmesan cheese, salt and pepper and mix everything very well.
Transfer the potato mixture into the prepared springform pan and spread it out evenly.

Bake in the oven until cooked through and golden brown on top, about 50-55 minutes.
Run a knife around the edge and carefully release the spring form ensuring the potato cake stays in place. Garnish with chopped parsley and serve.
