Popcorn Cauliflower
Crispy Popcorn Cauliflower is a delicious and healthy alternative to traditional popcorn. It’s made from cauliflower florets, seasoned with turmeric powder, garlic powder, and smoked paprika powder, coated in a mix of Panko and Parmesan, and baked until golden.
Not only these breaded cauliflower florets are delicious, but they are also healthy and very easy to make. They are perfect for a dinner side dish or as a healthy snack for kids!
Yield: Serves 4
- 1 cauliflower, trimmed and cut into bite-sized pieces
- 2 eggs
- 1 cup plain panko breadcrumbs
- 1/2 cup finely grated Parmesan cheese
- 2 teaspoons dried oregano leaves
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon garlic powder
- 1 teaspoon smoked paprika powder
- olive oil
- salt and pepper to taste
In a large pot bring water to a boil. Add the cauliflower and 1-tablespoon salt. Cook for 3-4 minutes or until just tender. Drain the cauliflower in a colander and set aside.
Meanwhile, in a bowl, whisk together the egg and turmeric powder.
In another large bowl combine the breadcrumbs, Parmesan cheese, garlic powder, paprika powder and oregano. Season well with salt and pepper.
Preheat oven to 400°F.
Place the cauliflower in a large bowl. Pour the egg-turmeric mixture over the cauliflower and toss to thoroughly coat.
Add the breadcrumb mixture to the cauliflower and toss to coat.
Arrange the cauliflower on a baking tray in a single layer and drizzle with a little olive oil.
Bake on the middle shelf of the oven for 30 minutes, or until starting to turn crisp and golden-brown. Turn the cauliflower 2 times during baking to ensure they crisp up well. Serve warm.
