Parmesan Garlic Roasted Potatoes Recipe - An easy side dish made with only a few simple ingredients that goes well with just about everything!
Baby potatoes are simply seasoned and roasted until they are golden brown and crispy on the outside, while tender on the inside. SO EASY!!

Yield: Serves 4
- 1 kg baby potatoes, scrubbed and halved
- 1/3 cup grated Parmesan cheese
- 1 teaspoon dried oregano leaves
- 1 teaspoon garlic powder
- 4 tablespoons olive oil
- chopped chives
- salt and pepper to taste
Preheat oven to 400 degrees F. Line a large baking sheet with parchment paper.
Place the potatoes in a large bowl. Add the olive oil, along with garlic powder, oregano, Parmesan cheese, salt and pepper. Toss to coat.
Spread the potatoes in a single layer on the baking sheet.
Roast in the oven until golden and crisp, about 30-35 minutes, flipping halfway through. Remove from oven, garnish with chopped chives and serve.
