Panir Bereshteh (Persian Cheese and Egg Dish)
Panir Bereshteh is a famous Persian veggie recipe from Gilan (Northern Province of Iran). This healthy and delicious recipe is a combination of feta cheese, butter, egg, dill and some spices.
Cheese and egg dish can be served in various ways, including as a dip for appetizers, with toasted bread for a light lunch, or as a breakfast option.
Yield: Serves 3
- 150 g feta cheese (If cheese is too salty, soak in cold water for 30 minutes and then drain)
- 3 tablespoons butter
- 1 1/2 tablespoons dried dill
- 3 eggs
- 1/4 teaspoon turmeric powder
- salt & pepper to taste
Melt butter in a frying pan over medium heat. Break cheese to pieces and add to the pan. Cook until cheese melts.
Add dill, turmeric powder, pepper, and eggs. Cook and stir until thickens, about 10 minutes. Adjust the seasoning.
Serve with French bread or cracker.
