Yield: Serves 2
- 2 eggs
- 1 tablespoon butter
- 1 teaspoon dried oregano leaves
- 1/2 tablespoon shredded parmesan cheese
- 1 tablespoon whipping cream 35%
- pinch garlic powder
- pepper to taste
In a small bowl, mix the Parmesan cheese, garlic powder, oregano and pepper. Set aside.
Turn the oven to broil (set on low). Place butter and whipping cream in a 3.5 x 6 inch ramekin.
Put the ramekin in the oven and broil until butter is melted, about 2-3 minutes.
Crack the eggs into the ramekin, taking care not to puncture the yolk.
Sprinkle the cheese and herb mixture over the eggs.
Put back under the broiler for 7-9 minutes (watch carefully while broiling). Remove from the oven and let sit for a minute.
Serve the oregano-baked eggs with toasted bread.
