Orange Cake

Yield: Serves 8
- 2 eggs
- 1 1/2 cups whole wheat all-purpose flour, plus 1 tablespoon for dusting
- 1 cup sugar
- orange zest from two large oranges
- 2/3 cup walnuts, chopped
- 1 stick (1/2 cup) unsalted butter, room temperature
- 1 teaspoon baking powder
- 1 cup milk
- 1/4 teaspoon ground nutmeg
- pinch of salt
In a bowl, whisk together flour, baking powder, salt and nutmeg. Set aside.
Using an electric mixer, beat the butter and sugar for a minute. Add the eggs and beat until smooth, about 1 minute.
Add flour mixture and milk; beat until smooth, about 1-2 minutes. Fold in orange zest and walnuts.
Preheat oven to 350 degrees F.
Spray an 8x8-inch baking dish with cooking spray. Dust with flour. Spoon the batter into the baking dish.
Bake on the middle rack of the oven until a toothpick inserted into center of cake comes out clean, about 50-55 minutes.
Remove from oven and let cool before slicing.
