Mixed Berry Muffins
What is better than a warm moist muffin with a cup of coffee? Nothing!
You are going to love how simple it is to make this Mixed Berry Muffins loaded with frozen berries and baked to perfection. I’m sure kids will love these berry muffins!

Yield: Makes 15 Muffins
- 1 1/2 cups whole wheat flour (or all-purpose flour)
- 1 cup milk
- 1 cup sugar
- 2 eggs
- 1 1/2 cups fresh or frozen berries
- 3/4 cup oil
- 1 teaspoon vanilla extract
- 1 teaspoon orange extract
- 2 teaspoons baking powder
- pinch of salt
Preheat oven to 350°F and line a 12-cup muffin tin with cupcake liners.
In a large bowl, whisk the flour, baking powder, and salt together until combined. Set aside.
In another bowl, beat the eggs, sugar, oil, orange extract, and vanilla extract with an electric mixer until smooth.
Slowly add the flour mixture and milk to the egg mixture and mix gently until just combined. Do not overmix.
Use a rubber spatula to fold in the mixed berries, folding just until combined.
Spoon batter into liners, filling 3/4 full (or a bit more).
Bake in the oven until a toothpick inserted in the center comes out clean, about 30-40 minutes. Remove from the oven and let cool completely on a baking rack.
