Mini Vegetable Sandwich
Mini sandwiches are so easy to make and they are perfect for brunch, party appetizer or kids snack.
To make these simple Mini Vegetable Sandwiches, stuff the mini pita breads with mushrooms, herbs and cheese, bake for couple of minutes and serve. This sandwich recipe is so versatile and you can add different ingredients to make them your absolute favorite!

Yield: Serves 4
- 20 mini pita breads
- 17 small mushrooms, washed and chopped
- 2 cups fresh parsley, finely chopped
- 1 1/2 cups shredded mozzarella cheese
- 4 minced garlic cloves
- 3 tablespoons vegetable oil
- 1/2 teaspoon turmeric powder
- salt & pepper to taste
Heat oil in a pan over medium heat. Add the garlic and sauté for 1 minute. Add the parsley and sauté for 5 minutes.
Add the mushrooms, turmeric powder, salt and pepper; cook uncovered until almost all the liquid is absorbed. Set the mixture aside.
Cut an opening at the seam of each pita bread by knife. Stuff the mini pita bread with cheese and mixture.
Preheat the oven to 350 degrees F.
Arrange the stuffed pita breads on an oven tray.
Bake in the oven until cheese melts, about 10 minutes. Serve immediately.
