Italian Pasta Salad
Easy Italian Pasta Salad with salami takes just minutes to make and can be served right away or refrigerated and serve later.
This pasta salad recipe is very versatile, and you can put any ingredients you have at home into it and still tastes good. Italian pasta salad is perfect for potlucks and picnics!

Yield: Serves 6
- 300 g shell pasta (Conchiglie)
- 200 g salami, cubed
- 1/4 cup grated Parmesan cheese
- 1 cup chopped sun-dried tomatoes
- 1 yellow bell pepper, chopped
- 1 cup sliced kalamata olives
- fresh mint for garnish
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- 1 garlic clove, minced
- 1/2 teaspoon dried oregano leaves
- black pepper
For salad:
For dressing:
Cook the pasta according to the package directions. Drain in a colander and rinse well, until cool.
For dressing, mix olive oil, balsamic vinegar, garlic, oregano and black pepper.
Once pasta has cooled, put pasta to a large bowl along with remaining salad ingredients. Pour the dressing over the pasta mixture and toss to coat. Garnish with chopped mint and serve immediately.
If you are not serving the salad right away, refrigerate and add the dressing just before serving.
