Invisible Apple Cake
Invisible Apple Cake (or Layered Apple Cake) made with layers of thinly sliced apples, held together with a little bit of cake batter and spiced with a bit of cinnamon.
The combination of everything is just so perfect and makes an impressive and tasty cake!

Yield: Serves 8
- 4 large apples, peeled, cored and thinly sliced
- 3/4 cup all-purpose flour
- 2 large eggs
- 1/2 cup sugar
- 1/2 cup oil
- 1/2 cup milk
- 1 1/2 teaspoons baking powder
- 1/3 cup sliced almonds
- zest of 1 orange
- 1/4 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- pinch of salt
- powdered sugar for dusting
Preheat oven to 360 F. Line a 9-inch springform pan with parchment paper on the bottom and grease the sides with cooking spray.
Using an electric mixer, beat the eggs, sugar, oil, and vanilla extract for about 2 minutes.
Whisk together flour, baking powder, cinnamon, and pinch of salt, and add to the egg mixture. Add milk and mix until just combined.
Add the apple slices, almonds and orange zest to the batter. Gently mix the apples without breaking them to ensure all apples are coated.
Pour the apple mixture into the prepared springform pan.
Bake in the oven for 45-50 minutes or until set.
Remove from oven and leave in pan to cool completely. Once cooled, run knife around edges and remove outer springform pan ring. Dust with powdered sugar and serve.
