Grilled Tomato Mozzarella Baguettes

Yield: Serves 4
- 1 French baguette
- 1/2 cup pesto
- 150 g fresh Mozzarella cheese, cut into thin slices
- 1 tomato, cut into thin slices
- 1/3 cup fresh basil, chopped
- olive oil
- balsamic glaze
Preheat oven to 370 degrees F. Line a baking dish with parchment paper.
With a sharp knife, make slits in your baguette about 1 inch apart, ensuring you don’t cut all the way through and keeping the base intact.
Spread pesto into the incisions.
Fill the slits with mozzarella and tomato slices, and place the baguette in the baking dish. Drizzle with a little olive oil.
Bake in the oven until crispy, about 10 minutes.
Remove from the oven, drizzle with balsamic glaze, and sprinkle with chopped basil.
