Date Nut Bars

If you like nut bars, make your own bars with your choice of ingredients. It is easier than you think!
Here is a simple No-Bake Date Bars recipe made with hazelnuts, pistachios, granola, butter and cacao powder. Just throw dates, cacao powder, maple syrup and butter in the food processor. Pulse until smooth. Add the rest of ingredients. Chill in the freezer until set and then cut into squares or bars.
No Bake Prune Bars made with nuts and old fashioned oats, and Energy Bites made with peanut butter and quick oats are other healthy snack ideas you can make at home.
Yield: Serves 10
- 1 cup pitted dates
- 2/3 cup honey almond granola
- 1/3 cup hazelnuts
- 1/3 cup slivered pistachios
- 1/3 cup chopped dried apricots
- 1/3 cup melted butter
- 1/3 cup cacao powder
- 1 tablespoon maple syrup
**If the dates are very hard or dry, soak them in warm water for 10 minutes. Then drain and pat dry. If they are soft and moist, skip the soaking step.**
Add the date, melted butter, maple syrup and cacao powder to a food processor and pulse until smooth.
Transfer to a bowl. Add the granola, apricots and nuts and mix well.
Transfer the mixture into a square pan (or baking dish) lined with baking parchment. Evenly spread the mixture into the pan. Using the back of a spoon, press the mixture firmly and evenly.

Place in the freezer for at least 30 minutes before cutting them into individual bars or squares. Store in the fridge.
