Date Cake
Here is a super easy to make cake recipe made with dates and nuts, spiced with cinnamon and nutmeg, and dusted with powdered sugar! Date Cake is the perfect holiday dessert alongside a cup of tea.
This recipe can be altered to accommodate your choice of nuts, or even chopped figs can be substituted for dates.

Yield: Serves 8-10
- 1 cup pitted and chopped dates
- 1 1/2 cups all-purpose flour, plus 1 tablespoon for dusting
- 1 cup chopped walnuts
- 2 eggs
- 1/2 cup sugar (add more if you like)
- 1 stick (1/2 cup) unsalted butter, room temperature
- 1 cup milk
- 1 teaspoon vanilla extract
- 2 teaspoons ground cinnamon
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon ground nutmeg
- pinch of salt
- 1/2 cup boiling water
- powdered sugar for garnish
Place the dates in a bowl. Pour over the boiling water. Soak the dates for 4-5 hours or until dates are tender. Drain the dates and set aside.
In a bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt. Set the flour mixture aside.
Using an electric mixer, beat the butter and sugar until smooth. Add the eggs and vanilla extract, and mix until smooth. Add the flour mixture and milk. Mix until just combined. Do not over-mix.
Fold in dates and walnuts.
Preheat oven to 350 degrees F.
Grease a round cake pan. Dust with flour. Pour the batter into the cake pan.
Bake on the middle rack of the oven until a toothpick inserted in center comes out clean, about 50-60 minutes.
Remove from oven and let cool in the pan for 15 minutes. Run a thin bladed knife around the edges to loosen. Dust with powdered sugar.

@Kholoud, Drain the dates and use just the dates and discard the water :)
