Crustless Tomato Pie

Are you having a brunch party at home? Then try this Crustless Tomato Pie! It is a wonderful brunch idea for a crowd!
A delicious combination of tomatoes, garlic, eggs, fresh cilantro, Mozzarella cheese, and some spices. Or customize it with your choice of herbs and cheese.
This Crustless Cauliflower Quiche made with cauliflower, potato and some fresh herbs is another easy recipe for your brunch menu.
Yield: Serves 4
- 4 tomatoes, sliced
- 2 garlic cloves, minced
- 1 tablespoon butter
- 2 cups shredded Mozzarella cheese, plus extra for top
- 2 eggs, beaten
- 1 cup chopped fresh cilantro
- dried oregano leaves
- salt and pepper to taste
- pinch of ground cinnamon
Lay the sliced tomatoes on a plate. Sprinkle lightly with salt and let sit for 20 minutes.
Meanwhile melt the butter in small skillet over medium heat. Add the garlic and sauté for 2 minutes. Transfer to a medium bowl.
Add the cilantro, eggs, cheese, cinnamon, salt and pepper to the bowl. Stir to combine.
Preheat oven to 375F.
Drain water off of the plate. Gently pat the tomatoes with paper towel, removing excess liquid.
Arrange the tomatoes in a single layer on a greased 8-inch round baking dish or pie pan.

Top with a layer of the cheese mixture.

Repeat until all ingredients have been used, finishing with a layer of tomatoes.

Top with mozzarella cheese and sprinkle with oregano.

Bake 30-40 minutes or until edges are lightly browned.
