Crispy Smashed Parmesan Broccoli
Crispy Smashed Parmesan Broccoli made with just 4-ingredients is one of the most delicious broccoli recipes to make.
This vegetarian dish is both flavorful and nutritious, making it a popular side dish or even a snack for those looking to add more vegetables to their diet.
You can pair it with a dipping sauce such as marinara sauce, garlic sauce, or ranch dressing - personally, I find it irresistible with Thousand Island dressing.
Yield: Serves 4
- 2 broccoli heads, cut into florets
- 1/2 cup Parmesan cheese, grated
- 1 cup Mozzarella cheese, shredded
- 1 teaspoon lemon pepper seasoning
- olive oil
- salt
- preferred sauce for serving, mine is Thousand Island dressing
Preheat oven to 400 degrees F. Line a large baking sheet with parchment paper.
Bring a large pot of water to a boil. Add the florets and 1-teaspoon salt. Boil for 4-5 minutes until fork tender but not too soft. Drain immediately and pat dry with a paper towel.
Combine the Parmesan and Mozzarella cheese, then spread them evenly in a single layer on the prepared baking sheet.
Arrange the broccoli florets on top.
Gently smash them with a glass.
Brush the smashed broccoli florets with olive oil. Sprinkle with salt and lemon pepper seasoning.
Bake in oven for 20-25 minutes or until crispy and golden brown. Allow to cool slightly and then break apart to serve.
