Yield: Serves 6
- 2/3 cup orzo
- 1 small onion, grated
- 3 garlic cloves, minced
- 1 tablespoon olive oil
- 1 can (796 ml) diced tomatoes
- 1 cup crushed tomatoes
- 1/2 teaspoon dried oregano
- 4 cups vegetable broth
- 1/2 cup heavy cream
- 1/2 teaspoon dried basil or 4 large fresh basil leaves
- salt and pepper, to taste
- 1 teaspoon sugar, if needed
- shredded Parmesan cheese, to garnish
In a pot heat the olive oil over medium heat. Add the onion and sauté for 4-5 minutes. Add the garlic and continue to sauté for 2 minutes.
Add the broth, oregano, basil, sugar, crushed tomatoes and diced tomatoes, and bring to a simmer. Cover the pot and cook for about 35-40 minutes over medium heat.
Add the orzo, salt and pepper to taste and give it a good stir. Cook covered on low until the orzo is tender and cooked through (or following the cook time on the orzo package).
Add the heavy cream and cook for 2 more minutes. Taste and adjust seasonings. Garnish with Parmesan cheese and serve.
