Coconut Muffins

Yield: Makes 12 Coconut Muffins
- 3 cups of sweetened grated coconut
- 1 cup whole wheat flour, sifted
- 2/3 cup sugar
- 1/2 cup milk
- 1/4 cup oil
- 2 eggs
- 1 1/2 teaspoons baking powder
- 1 teaspoon vanilla extract
- pinch of salt
Preheat oven to 350 degrees F. Line a 12-cup muffin pan with paper liners.
Combine the flour, grated coconut, baking powder, and salt together in a bowl and set aside.
In another bowl, beat the eggs, sugar, oil, and vanilla extract with an electric mixer until smooth.
Slowly add the flour mixture and milk to the egg mixture and mix gently until just combined. Do not overmix.
Fill each lined muffin cups about 3/4 full.
Bake in the oven until a toothpick inserted in the center comes out clean, about 25-28 minutes. Remove from the oven and let cool completely on a baking rack.
