Chilled Avocado Cucumber Soup
Chilled Avocado Cucumber Soup loaded with fresh herbs, avocado, cucumber, yogurt and lime juice! A creamy cold soup full of healthy ingredients that is great for summer days and will leave you feeling refreshed!

Yield: Serves 5
- 1 medium English cucumber, sliced into 1/2 inch pieces
- 1 ripe avocado
- 3/4 cup finely chopped fresh basil
- 1/3 cup finely chopped fresh parsley
- 1 cup plain yogurt
- 2 tablespoons olive oil
- juice from 1 lime
- salt and pepper to taste
Cut the avocado in half and remove the pit. Scoop out the avocado and place in the blender with the cucumber.
Add the rest of ingredients. Blend until smooth and creamy. Chill for at least 1 hour before serving.
