Chicken Tortilla Pie
Chicken Tortilla Pie is a delicious main dish recipe with layers of tortillas, shredded chicken, refried beans, and cheese. This simple pie is the perfect dish for those busy weeknights and will become a new favorite the whole family will enjoy!

Yield: Serves 4
- 2 cups shredded cooked chicken
- 1 1/2 cups refried beans
- 1 1/4 cups enchilada sauce
- 3 cups shredded Mexican blend cheese
- 1 cup ricotta cheese
- 5 flour tortillas
- 1 1/2 cups chopped cilantro
- 2 tablespoons taco seasoning
Preheat the oven to 350 degrees F.
Warm the shredded chicken in a skillet over medium-heat. Add the refried beans, 1-cup enchilada sauce and taco seasoning. Stir and continue cooking for couple of minutes.
Remove from the heat. Add the ricotta cheese and cilantro and stir until thoroughly combined. Set aside.
Grease an 8-inch round baking dish with cooking spray. Place one tortilla in the baking dish.
Spread a layer of the chicken mixture evenly on top.
Sprinkle 1/3 cup of the shredded cheese on top.
Repeat 4 more layers, then pour 1/4 cup of the enchilada sauce on top.
Sprinkle with the remaining shredded cheese.
Bake in the oven for 20-25 minutes or until cheese is melted. Garnish with cilantro and serve!
