Chicken Cordon Bleu Casserole
Simple Chicken Cordon Bleu Casserole made with shredded cooked chicken, smoked beef (or ham), ricotta cheese, mozzarella, Parmesan cheese and bread crumb topping.
This easy chicken dish is a casserole version of the classic chicken cordon bleu recipe with some changes, that comes together quickly if you prepare the chicken ahead of time. Perfect for weeknight dinner!
What to serve with this dish? You can serve this chicken cordon bleu casserole by itself or over pasta or with Green Beans and Dill Salad.
Yield: Serves 4
- 3 cups shredded Cooked Chicken
- 250 g sliced deli-style smoked beef (or ham), chopped
- 2 cups (475 g) ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1 1/2 cups shredded mozzarella cheese
- 1 cup plain panko breadcrumbs
- 1/4 cup milk
- 3 tablespoons melted butter
- 2 garlic cloves, minced
- 2 tablespoons dijon mustard
- salt and pepper
Preheat oven to 375°F.
In a large bowl, whisk together the milk, ricotta cheese, mustard, garlic, salt and pepper. Stir in the chicken and chopped beef.
Spray an 8-inch round casserole dish with non-stick oil spray. Place the chicken mixture into the casserole dish.
Sprinkle the Parmesan cheese and mozzarella cheese over the chicken mixture.
In a small bowl, mix together the melted butter and breadcrumbs. Sprinkle evenly over the casserole.
Bake in the oven until breadcrumbs are golden brown and casserole is bubbly, about 40-45 minutes.
