Chicken Cheese Sandwich

Yield: Serves 4
- 1 1/4 cups warm shredded Cooked Chicken
- 8 slices of French toast loaf (or any kind you like)
- 1/3 cup carrot, grated
- 1/3 cup green onion, sliced
- 2 tablespoons mayonnaise
- 1 tablespoon hot sauce
- 2 tablespoons butter
- 2/3 cup mozzarella cheese, shredded
- 2/3 cup cheddar cheese, shredded
Mix the chicken, hot sauce, mayonnaise, carrot and green onion in a small bowl. Set aside.
Butter the outside of each slice of bread.
Mix mozzarella cheese and cheddar cheese. Sprinkle over the inside of one slice of bread.
Then top with the chicken mixture.
Sprinkle a layer of cheese over the mixture.
Top with the other slice of bread (butter side up).
Heat a non-stick pan over medium heat. Place the sandwich in the hot pan. Heat until golden brown, about 2-3 minutes per side.
Use a spatula to turn the sandwich over to its other side. Press down on the sandwich with the spatula.
Remove from the pan, cut in half and serve.
