Celery Soup
Homemade Celery Soup without heavy cream - a healthy, comforting and low carb soup with a few ingredients that can be made in 35 minutes.
To make this celery soup, after cooking all the vegetables, puree in a food processor until smooth. Add butter and lemon juice and serve.

Yield: Serves 6
- 8 stalks of celery, washed and chopped
- 3 medium potatoes, peeled and chopped
- 1 medium onion, chopped
- 3 cups chicken broth (or vegetable broth)
- 25 g butter
- 3 tablespoons lemon juice (you can add more or less)
- 3 teaspoons curry powder
- salt to taste
Place celery, potatoes, onion and chicken broth in a cooking pot. Add salt and curry powder.
Cover the pot and bring to a boil. Reduce heat to medium and simmer until vegetables are tender, about 20-25 minutes.
Remove the pot from heat and let the soup cool slightly. Use a blender or food processor to puree the soup. Then return to the pot, add butter and lemon juice. Cover and cook for 3-5 minutes.
If soup is too thick, add milk.

Finally a great way to use up that leftover celery. As-is this was a hit but I’m going to try substituting a dry white wine for the lemon juice next time.
