Broccoli Salad

Broccoli Salad, a simple make-ahead salad recipe made with sun-dried tomatoes, green onion, fresh basil, sunflower seeds, cheddar cheese and a homemade mayo dressing. This healthy salad is fresh, easy to make and full of flavor that is perfect for holidays and potlucks.

Yield: Serves 3
- 4 cups broccoli florets
- 1/4 cup sliced green onions
- 1/2 cup sun-dried tomatoes in oil, drained and chopped
- 1/3 cup chopped fresh basil
- 1/2 cup cubed cheddar cheese
- 3 tablespoons roasted sunflower seeds
- 1/4 cup mayonnaise
- 1/4 cup plain yogurt
- 1 1/2 tablespoons white vinegar
- salt and black pepper
For salad:
For dressing:
Place broccoli florets, cheddar cheese, sun-dried tomatoes, sunflower seeds, basil, and green onion in a large bowl.
In a separate, small bowl, whisk together mayo, yogurt, vinegar, salt, and pepper until smooth and well-combined. Pour over salad and toss gently to coat.
Cover and refrigerate for at least 30 minutes before serving.
