Berry Croissant Casserole

Berry Croissant Casserole! You won’t believe how easy to prepare and delicious this breakfast casserole is. A tasty combination of croissants, berries and cream cheese. Our new favorite breakfast recipe!
You can serve this berry casserole as a breakfast or even as a dessert with a scoop of vanilla ice cream.

Yield: Serves 8
- 4 large croissants, cut into small pieces (about 6 cups)
- 1 1/2 cups frozen mixed berries (I used raspberries, blueberries, and cherries)
- 250 g cream cheese, softened
- 2 large eggs
- 1 cup milk 2%
- 1 teaspoon vanilla extract
- 3/4 cup sugar
- 1 teaspoon orange zest
- powdered sugar for garnish
Preheat oven to 350°F.
Lightly spray a 8 x 11-inch baking dish with cooking spray.
Place the croissant pieces in the baking dish. Scatter the frozen berries over the top.

Beat the cream cheese and sugar in a bowl with an electric mixer until smooth. Add in the eggs, milk, orange zest, and vanilla extract, and beat until combined.
Pour cream cheese mixture over croissants and berries. Let rest for at least 30 minutes.
Bake for 40-45 minutes or until golden and when a knife inserted in center comes out clean.
Dust with powdered sugar and serve warm for breakfast or with ice cream as a dessert.
