What can I do with a lot of bell peppers? Make a simple Bell Pepper Salsa — a vibrant, versatile dish known for its fresh, crisp flavors and colorful appearance. It’s a delicious alternative to traditional tomato-based salsas and can be used as a dip, topping, or side dish.

How to make salsa with bell pepper? Dice bell peppers and onion. Mix with parsley, olives, olive oil, pomegranate molasses, sumac, salt, and pepper. Chill and serve.

Bell Pepper Salsa

Yield: Serves 4

Ingredients:
  • 1 red bell pepper, diced
  • 1 orange bell pepper, diced
  • 1/2 small red onion, diced
  • 1 cup olives, chopped
  • 1 cup parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons pomegranate molasses
  • 1 tablespoon sumac
  • salt and pepper to taste
Instructions:

In a medium bowl, mix all ingredients.

Let the salsa chill in the refrigerator for 20-30 minutes to allow the flavors to meld. Serve with your favorite tortilla chips.
