Beet Yogurt Dip

One of the best dips with yogurt is Beet Yogurt Dip that is so tasty, easy to make and has the most amazing color. Beet and yogurt dip is a healthy appetizer that can be served as a side dish for grilled chicken and beef.
All you need to do is mix the grated cooked beet, yogurt and garlic, season with salt, chill and serve with raw vegetables.
If you like this Persian yogurt beet dip, you may also like Minty Green Pea Dip made with cooked green peas, fresh mint, yogurt, lemon juice, lemon zest and garlic.
Yield: Serves 4
- 1 large beet
- 2 cups plain yogurt (I used 3%)
- 1 garlic clove, finely chopped
- salt and pepper
Cut off the greens of the beet and wash it gently, trying not to break the skin.
Place the beet in a pot and pour water until beet is covered. Cover the pot and bring to a boil. Simmer for 45 minutes (depending on size) or until beet can easily be pierced through with a fork.
As soon as it is cool enough to handle, gently rub the beet to remove the outer layer of skin and then grate.
In a bowl, mix beet, yogurt and garlic. Season with salt and pepper. Cover and chill at least 3 hours.
