Beet Chips

If you need a super simple snack idea for school, you have to try this homemade Oven-Baked Beet Chips recipe. This delicious crunchy beet chips recipe is a unique alternative to the potato chips.
Just slice the beets evenly with a mandoline slicer, toss with olive oil and salt, and bake in the oven until crispy.

Yield: Serves 2
- 3 medium beets, scrubbed and trimmed
- 2 tablespoons extra-virgin olive oil
- pinch of salt, optional
Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper.
Slice beets 1/16 inch thick with a mandoline.
In a large bowl, toss beets with olive oil and salt. Arrange beets in a single layer.

Bake for 18-20 depending on the size of the slices until they are crisp (be careful not to burn them). Transfer to a wire rack; chips will crisp up as they cool.
