Banana Cake

Delicious and easy Banana Cake recipe made with pureed bananas, chopped walnuts, flour, egg, cinnamon, cardamom and nutmeg.
If you have lots of ripe bananas at home and don’t know what to do with them, this cake recipe is the best recipe to use them! Or try my Banana Pudding Pie and my Banana Custard Pudding, two of my favorite banana recipes!
Yield: Serves 8
- 1 1/2 cups all-purpose flour, plus 1 tablespoon for dusting
- 1 cup sugar
- 1 stick (1/2 cup) unsalted butter, room temperature
- 2 eggs
- 3 ripe bananas, mashed
- 1/3 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup coarsely chopped walnuts
- 1/4 teaspoon ground cinnamon
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cardamom
- pinch of salt
Using an electric mixer, beat the butter and sugar until smooth and creamy. Add the eggs and vanilla extract. Mix until smooth.
With the mixer on low speed, add the flour, cinnamon, baking powder, nutmeg, cardamom, salt, and milk. Mix until just combined. Do not overmix.

Fold in mashed banana and walnuts.
Preheat oven to 350 degrees F.
Grease a round cake pan. Dust with flour. Pour the batter into the cake pan.

Bake on the middle rack of the oven until toothpick or skewer inserted into center of cake comes out clean, about 50-55 minutes.
Remove from oven and let cool in the pan for 15 minutes. Run a thin-bladed knife around the edges to loosen.
