Baked Tomatoes with Cheese
Baked Tomatoes with Cheese - A super simple appetizer or veggie side dish to serve with dinner!
Tomatoes are stuffed with cream cheese, olives, sunflower seeds and oregano. Baked in the oven and garnished with fresh mint. It is a perfect recipe for potlucks and entertaining.

Yield: Serves 6
- 6 plum tomatoes
- 250 g cream cheese, softened
- 2 tablespoons sunflower seeds
- 1/2 cup chopped kalamata olives
- extra virgin olive oil
- 1/2 teaspoon dried oregano leaves
- black pepper
- fresh mint for garnish
Preheat oven to 350 degrees F.
Cut tomatoes in half horizontally. Remove seeds and pulp.
Place them cut side down on a wire rack. Let them drain for 30 minutes.
Meanwhile mix the cream cheese, olives, sunflower seeds, oregano, and pepper in a bowl until thoroughly combined.
Fill each tomato with the cheese mixture and place on a parchment lined baking sheet. Bake for about 30 minutes. Remove from the oven and drizzle with a small amount of olive oil and garnish with fresh mint.
