Yield: Serves 5
- 450 g extra lean ground beef
- 450 g uncooked Rotini pasta
- 1 medium onion, finely chopped
- 1 cup thinly sliced carrots
- 2 garlic cloves, minced
- 2 1/2 cups pasta sauce (any tomato sauce will work)
- 2 cups shredded mozzarella cheese
- 3 tablespoons oil
- 1 teaspoon turmeric powder
- 1 teaspoon dried oregano leaves
- salt and pepper to taste
Preheat oven to 350°F. Grease a 9 x 13 inch casserole dish with oil.
Heat oil in a large skillet over medium heat. Add onion and sauté until tender. Add garlic and sauté for 1 minute.
Increase heat to medium-high. Add ground beef and cook until no longer pink. Reduce heat to medium. Add turmeric powder and stir well.
Add carrot, pasta sauce, oregano, salt and pepper to taste. Mix well and cook covered for 20 minutes.
Meanwhile bring a large pot of salted water to a boil. Add pasta and cook until al dente (it should be slightly underdone).
Drain pasta and place into the baking dish. Pour the beef mixture over and toss until it is well combined.
Top with mozzarella cheese. Bake uncovered for 25-30 minutes or until cheese is nicely melted.
