Baked Pears with Mascarpone Cream

Yield: Serves 8
- 4 pears
- honey
- 2 tablespoons butter, cut into 8 cubes
- 1 cup mascarpone cheese
- 1 cup whipping cream
- 1 teaspoon vanilla extract
- 2 tablespoons chopped pistachios
- ground cinnamon for garnish
Preheat oven to 360 degrees F. Line a baking dish with parchment paper.
Cut the pears in half from stem to base. Use a spoon to scoop out the seed. Place pears in the baking dish. Top each pear with 1 butter cube and drizzle with honey.

Bake until pears are tender but not mushy, about 45-50 minutes.
Meanwhile beat the whipping cream with an electric mixer until soft peaks form. Add the vanilla extract and mascarpone, and slowly mix with a wooden spoon.
When the pears are done baking remove from the oven and let cool for 5-10 minutes.
Then transfer them to a serving plate. Top with mascarpone cream, drizzle with more honey and garnish with pistachios and cinnamon.
