Baked Cod
This Baked Cod is one of the easiest fish recipes you can make for midweek dinner!
Cod fillets are coated with lemon juice and olive oil, topped with a Crunchy breadcrumb-butter mixture and then baked into perfection.

Yield: Serves 3
- 450 g cod fillets (1 inch thick)
- 5 tablespoons fresh squeezed lemon juice
- 3 tablespoons fresh parsley, finely chopped
- 2 tablespoons onions, finely chopped
- 4 garlic cloves, finely chopped
- 1 teaspoon dried oregano leaves
- 1/4 teaspoon paprika powder
- 1/2 cup dry bread crumbs
- 1 tablespoon ground walnuts
- 2 tablespoons butter
- 4 tablespoons extra-virgin olive oil
- salt and black pepper to taste
In a skillet, heat the olive oil and butter over medium heat. Add the garlic and onions. Sauté for 3-4 minutes, stirring occasionally.
Remove from the heat and stir in 3 tablespoons of lemon juice. Add the bread crumbs, oregano leaves, parsley, paprika powder and ground walnuts. Mix well and set aside.
Preheat oven to 400 degrees F. Line a baking pan with a parchment paper.
Wash the cod fillets and pat dry. Place them in the baking pan. Sprinkle with the remaining lemon juice, drizzle a bit of olive oil and season lightly with salt and black pepper.
Press the bread crumbs mixture over the top of the cod fillets.
Place on the middle rack of the oven and bake until cooked through, about 20-22 minutes. Transfer to a serving plates and serve immediately.
