Avocado Toast

Mashed avocado, tomato and Feta cheese on toast is an easy and delicious idea for breakfast or for a healthy snack.
For making Avocado Toast, slice the ripe avocado in half, scoop out the flesh into a bowl, mash with a fork, add fresh lemon juice and salt, and stir well. Toast the bread until crisp. Spread a layer of mashed avocado on the bread, top with tomato, Feta cheese and black pepper, and serve immediately.

Yield: Serves 2
- 2 slices whole wheat bread
- 1 ripe avocado
- 1 medium tomato, sliced
- 1/3 cup crumbled Feta cheese
- fresh lemon juice, as much as you like
- salt and black pepper
Toast the bread slices until crispy and golden brown.
While the bread is toasting slice the avocado in half, remove the seed, scoop out the flesh into a bowl, and mash it with a fork. Add the lemon juice and salt to taste. Mix well.
When the toast is ready, spread the mashed avocado evenly across toast, then top with tomatoes and Feta cheese. Sprinkle with black pepper and serve immediately.
