Asparagus and Tomato Salad with Feta
Asparagus Salad made with grape tomatoes and walnuts, topped with crumbled feta and flavored with lemon-vinegar dressing. This salad is super fresh and very easy to make and is perfect for summer barbecue or potluck!

Yield: Serves 3
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 10 ounce grape tomatoes, halved
- 1/2 cup chopped walnuts
- 1/3 cup crumbled feta
- juice of 1 lemon
- 1 tablespoon white vinegar
- 3 tablespoons olive oil
- salt and black pepper to taste

Set up a large bowl with ice water.
Bring a large pot of water to a boil. Add the asparagus to the boiling water and allow to boil just until tender, about 3-5 minutes.
Drain and immediately transfer the asparagus to the bowl of ice water. Let rest about 10 seconds then drain asparagus well.
Meanwhile to prepare the dressing, whisk together the fresh lemon juice, olive oil, white vinegar, salt and black pepper.
In a large bowl, combine asparagus, halved grape tomatoes and chopped walnuts. Pour the dressing over the salad and toss to combine. Top with the crumbled feta cheese. Drizzle with balsamic glaze and serve!
