Apple Cinnamon Muffin

These tasty homemade Apple Cinnamon Muffins are made with whole wheat flour, filled with finely chopped apples and plenty of cinnamon spice, and baked until golden brown. They are easy to make and are perfect for a quick snack or breakfast.

Yield: Makes 15 Apple Muffins
- 1 1/2 cups whole wheat flour (or all-purpose flour)
- 1 large apple, peeled and finely chopped
- 1 cup milk
- 1 cup sugar
- 2 eggs
- 3/4 cup oil
- 2 teaspoons vanilla extract
- 2 teaspoons baking powder
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cardamom
- 2 1/2 teaspoons ground cinnamon
- pinch of salt
Preheat oven to 350 degrees F.
In a large bowl, whisk the flour, baking powder, nutmeg, cardamom, cinnamon, and salt together until combined. Set aside.
In another bowl, beat the eggs, sugar, oil, and vanilla extract with an electric mixer until smooth.
Slowly add the flour mixture and milk to the egg mixture and mix gently until just combined. Do not overmix.
Then stir in the chopped apple.

Line a 12-cup muffin tin with cupcake liners. Spoon batter into liners, filling 3/4 full (or a bit more).

Bake in the oven until a toothpick inserted in the center comes out clean, about 30-40 minutes. Remove from the oven and let cool completely on a baking rack.
