Tired of the same boring appetizer? Try this pan fried olives with green onions, olive oil, tomato, and turmeric.

Sautéed Olives can be served warm or cold with any kind of bread as an easy appetizer or as a side dish with roasted meat.

Sautéed Olives

Yield: Serves 5

Ingredients:
  • 1 cup green olives, pitted (if olives are salty, soak in the cold water for 15-20 minutes and then drain)
  • 1 cup black olives, pitted
  • 4 medium tomatoes, diced
  • 1 cup sliced green onions
  • 4 tablespoons extra-virgin olive oil
  • 2 tablespoons tomato paste
  • 3/4 teaspoon turmeric powder
  • salt and black pepper to taste
Instructions:

Heat olive oil in a frying pan over medium heat. Add green onions and sauté until soft, about 5 minutes. Add turmeric powder and stir. Add the olives and cook for 2 minutes.

Stir in the diced tomatoes and tomato paste, and cook for 10 minutes. Add salt and black pepper.

Serve warm or cold with any kind of bread or cracker.
