Sauteed Olives Recipe

With these simple ingredients, you can create a rich and delicious appetizer. Make this Sauteed Olives and serve warm or cold with any kind of bread you like.

Yield: Serves 5

  • 1 cup (about 140 g) green olives, pitted (if olives are salty, soak them in the cold water for 15-20 minutes and then drain)
  • 1 cup (about 140 g) black olives, pitted
  • 4 medium tomatoes (about 480 g), diced
  • 1 cup sliced green onions
  • 4 tablespoons extra-virgin olive oil
  • 2 tablespoons tomato paste
  • 1/2 teaspoon sugar
  • 3/4 teaspoon turmeric powder
  • salt and black pepper to taste

Heat the olive oil in a frying pan over medium heat. Add the green onions and fry until soft, about 5 minutes. Add turmeric powder and stir. Add the olives and cook for 2 minutes. Then stir in diced tomatoes, sugar and tomato paste and simmer for 7-10 minutes, stirring occasionally. Taste for seasoning and add salt and black pepper. Serve warm or cold with any kind of bread or cracker.
