Roasted Pistachios

Yield: Makes 4 cups roasted pistachios

Ingredients:
  • 4 cups raw pistachios (with shell)
  • 1/4 cup white wine vinegar
  • 1 cup water
  • 4 teaspoons salt
Instructions:

Pour water into a large and deep saucepan. Add salt and vinegar. Bring to a boil.

Add pistachios and stir. Simmer over medium heat until all the liquid is absorbed.

Preheat oven to 280 degrees F.

Spread pistachios on a baking sheet in a single layer. Roast in the oven for about 45-50 minutes or until they are roasted, stirring after 30 minutes.

Remove from the oven and let it get to room temperature before serving.

What if they are already roasted without sale and I want to add salt to them?

why do you add vinegar to the solution?

Dear Lisa, Thanks for the comment. I like the taste of vinegar but it's optional. It depends on your taste, you can make it with salt (whiteout vinegar) or use lemon juice instead.
