Refried Bean Casserole
What to do with a can of refried beans? Try this Refried Bean Casserole - a delicious Mexican-inspired dish made with refried beans, green pepper, olives, fresh basil, mozzarella cheese, and salsa sauce.
This vegetarian casserole is hearty, flavorful, and often served as a main dish or a side dish alongside Mexican rice, tortillas, or salad.
Yield: Serves 4
- 1 can (398 ml) refried beans
- 1 1/2 cups shredded mozzarella cheese
- 2 cups chopped green pepper
- 1/2 cup sliced black olives
- 1 cup salsa sauce (ready to use) or Fresh Tomato Salsa Sauce
- 1/2 cup sour cream
- 2/3 cup chopped fresh basil
- 2 tablespoons vegetable oil
Heat the oil in a skillet over medium heat. Add the green pepper and basil. Sauté for 8-10 minutes.
Add olives, refried beans, sour cream and salsa sauce. Cook uncovered for 3 minutes.
Preheat the oven to 370 degrees F.
Coat the bottom and sides of a baking dish with oil. Pour the bean mixture into the baking dish. Sprinkle with mozzarella cheese.
Place on the middle rack of the oven and bake until cheese melts and top is lightly golden brown.
Serve with bread or tortilla chips.
