Fereni is a traditional Persian pudding dessert. A creamy and smooth dessert made with rice flour, sugar, milk, and rose water. Fereni can be served warm or cold.
Yield: Serves 2
- 3 cups cold milk
- 4 tablespoons sugar
- 3 tablespoons rice flour
- 2 1/2 tablespoons rosewater (you can find it at any Iranian store)
- slivered pistachios for garnish
- ground cinnamon for garnish
Dissolve rice flour in cold milk and pour in a small pot. Add sugar and rosewater. Bring to a boil, stir regularly. Cook and stir over medium heat until fereni thickens, about 30 minutes. Pour into individual dessert dishes and garnish with ground cinnamon and slivered pistachios. Serve cold or hot.
