Fereni (Persian Pudding)

Fereni is a traditional Persian pudding dessert made with rice flour, sugar, milk, rose water, and a pinch of cardamom and garnished with cinnamon and pistachios.
This simple Persian rice flour dessert is very comforting for the cold days and can be served warm or cold.

Yield: Serves 3
- 3 cups cold milk
- 4 tablespoons sugar
- 4 tablespoons rice flour
- 2 tablespoons rosewater (you can find it at any Iranian store)
- pinch of ground cardamom
- slivered pistachios for garnish
- ground cinnamon for garnish
Dissolve rice flour in cold milk until smooth.
Place flour mixture, sugar, cardamom and rosewater in a small saucepan over medium-low heat, stirring constantly until comes to the boil and thickens, about 30 minutes.
Pour into individual dessert dishes and garnish with cinnamon and pistachios. Serve cold or hot.
