Yield: Serves 8
- 1 1/2 cups all-purpose flour, plus 1 tablespoon for dusting
- 1 cup sugar
- 2 eggs
- 3/4 cup oil
- 1/2 cup coarsely chopped walnuts
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons baking powder
- 3 tablespoons unsweetened cocoa powder
- 1/3 cup milk chocolate chips
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cardamom
- pinch of salt
- powdered sugar, for garnish
Preheat oven to 350 degrees F.
In a bowl, whisk together flour, baking powder, cocoa powder, nutmeg, cardamom, and salt. Set the flour mixture aside.
Beat the sugar, oil, eggs and vanilla extract with a electric mixer in a mixing bowl until smooth.
Slowly add the flour mixture and milk, and mix until smooth. Fold in chocolate chips and walnuts.
Grease a round cake pan. Dust with flour. Spoon the mixture into the pan.
Bake in the oven until toothpick or skewer inserted into center of cake comes out clean, about 50-55 minutes.
Remove from oven and let the cake cool in the pan for 10-15 minutes. Run a thin-bladed knife around the edges to loosen. Dust with powdered sugar and serve.
