Baked Feta with Spinach and Chickpeas
Baked Feta with Spinach and Chickpeas! A healthy vegetarian dish made with chickpeas, spinach, garlic and crushed tomatoes. Topped with cubed or crumbled Feta. Baked in the oven and garnished with fresh chopped cilantro. Can be served as breakfast, appetizer or main dish with any kind of bread.
I absolutely love dinners like this chickpeas and spinach dish. It looks amazing, tastes incredible, and is very easy to make.
Yield: Serves 4
- 1 can (540 ml - about 2 cups) chickpeas, drained
- 2 bunches spinach, about 500 g, chopped
- 3 garlic cloves, finely chopped
- 2 cups crushed tomatoes
- 100 g block Feta, cut into cubes
- 1/2 teaspoon turmeric powder
- olive oil
- 3 tablespoons cooking oil
- fresh chopped cilantro for garnish
- salt and black pepper to taste
Heat the cooking oil in a skillet over medium heat. Add the garlic and sauté for 1 minute. Add the turmeric and give it a quick stir.
Add the spinach and cook over medium-high heat until all the liquid is absorbed.
Add the chickpeas, crushed tomato and salt to taste. Cook until thickened.
Meanwhile, preheat oven to 350 degrees F.
Place the chickpeas-spinach mixture in an 8-inch round baking dish and top with the Feta. Bake in the oven until cheese is softened, about 12-15 minutes.
Remove from the oven, drizzle a little olive oil over, sprinkle with black pepper, garnish with cilantro and serve with bread.

This is such a yummy dish, and super easy to make. I had it for breakfast with a scrambled egg and some garlic toast. I think it would make an excellent hot appetizer with toast rounds or breadsticks. Thank you for posting!
